The white wines of Châteauneuf du Pape, are one of the best of the white wines of the South of France. Since 1991, the enclosure of Clos Saint-Michel produces with success its Châteauneuf du Pape white wines and achieves awards in Paris and Orange. Excellent produced wine that under goes a low temperature vinification
process in stainless steel tanks during 3 weeks, then 6 months to mature before being bottled.
Half of the vinification process is in stainless steel tanks thermo regulated for the freshness, smoothness, fruitiness and minerals and then in the barrels for the richness and fullness stored and aged 8 to 10 months before being bottled. A highclassed wine that merits its awards. It can be tasted in the following year of its production, but it will improve over five years or more in ageing. A structured wine, powerful and fruity at the same time. Blend of aromas such as toasted bread, honey wax and white fruits. The wine combines well with fish, white meats, Mediterranean kitchen (tuna à la provençale, cold ratatouille) and with certain goat cheeses.
